PRESENTATION

“I don’t cook to impress. I cook to remind. The kitchen is a way to express feelings without words. And when people leave the table with a smile, I feel that something real has happened between us.”

Zac Posen

Vasilis Makrakis, Chef of Milia Restaurant

THE

TRADITION

When in 1994 the first visitors were hosted in Milia, Chania, at an altitude of 550 meters, it was not a given that today, 30 years later, a restored medieval settlement would house one of the top restaurants of contemporary Cretan cuisine. The Milia Restaurant is located in a stunning mountainous landscape of Chania, within the Milia Mountain Retreat. It is a unique destination where gastronomy meets nature and the allure of the senses.  The restaurant offers “twisted” Cretan flavors full of originality, with ingredients sourced from the gardens of Milia or from small local producers. The menu changes according to the season, always maintaining the authenticity of Cretan cuisine and relying on local, organic products. The philosophy of the Milia Restaurant is sustainability, simplicity, and respect for the environment and tradition.  The traditional architecture and the serene atmosphere of the area create a unique experience for the visitor. Ideal for those seeking flavors with identity and a connection to nature, the Milia Restaurant is a journey into the most contemporary authentic face of Crete.

Contemporary

LOOK

Vassilis Makrakis learned Cretan cuisine with his hands in the soil, the scent of herbs in the air, and the taste of freshly baked bread on his lips. In the narrow paths of Milia—where stone, light, and time whisper together—Vassilis grew up with stories told around the table. And those stories became his compass.

Today, as the chef of Milia Restaurant, he returns to his roots. With respect for the land that nurtured him, and inspiration drawn from memory and nature, he creates dishes rich in imagination, flavor, and tradition—dishes that bring together all the elements of fine gastronomy. Every ingredient has its place; every season dictates the menu. Everything he cooks is born beside him: in the mountains, in the garden, in the cellar.

His cooking, as an act of love, is a collaboration with nature—a celebration. For Vassilis, the kitchen is a language beyond words, and every dish is a whisper of Crete.
